Instructions
- Preheat your oven to 200°C (400°F).
- In a large oven-safe pan, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 3-4 minutes.
- Add the beef mince to the pan, breaking it apart with a spatula. Cook until browned, around 5-6 minutes.
- Stir in the diced carrot and potatoes, mixing well. Season with salt and black pepper.
- Pour in the beef broth, bringing the mixture to a simmer. Once simmering, remove from heat.
- Cover the pan with foil and place it in the preheated oven. Bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, allowing the top to become golden brown.
- Once done, take out of the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
