Instructions
- Preheat your oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced red bell pepper, cumin, paprika, salt, and black pepper. Cook for another 2 minutes.
- Add the pork mince to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
- Remove from heat and stir in the fresh parsley. Let the mixture cool slightly.
- Place a tortilla on a clean surface and spoon a portion of the pork mixture into the center. Roll the tortilla tightly to enclose the filling and place it seam-side down on a baking tray.
- Repeat with the remaining tortillas and pork mixture.
- Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden and crispy.
- Serve warm with a drizzle of yogurt on top.
