Instructions
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine lamb cubes, cumin, coriander, paprika, minced garlic, and olive oil. Mix well to coat the lamb evenly.
- On a baking tray, arrange the lamb and add the chopped vegetables: red and yellow bell peppers, eggplant, zucchini, and red onion. Drizzle with a bit more olive oil and season with salt and pepper.
- Bake in the preheated oven for 40-45 minutes, or until the lamb is cooked through and the vegetables are tender and slightly caramelized.
- Remove from the oven and let cool slightly. Serve the lamb and vegetables on a platter, garnished with chopped parsley.
