Instructions

  1. Preheat the oven to 180°C.
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion and red bell pepper until softened, about 5 minutes.
  3. Add the spinach and cook until wilted. Season with salt and pepper, then remove from heat.
  4. In a bowl, whisk the eggs until well combined. Stir in the sautéed vegetables.
  5. In a baking dish, layer two tortillas, then pour half of the egg mixture over them. Repeat with the remaining tortillas and egg mixture.
  6. Sprinkle the grated cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden.
