Cook's note
If you prefer farro, cook 280 g pearled farro in lightly salted water until just tender, 18-20 minutes, then drain well. Boneless, skinless chicken thighs also work; grill 6-7 minutes per side to 74°C. Green grapes can substitute for red; choose firm, seedless fruit. If grilling outdoors, preheat to medium-high (about 230°C) and use a grill basket for the grapes. Leftovers are best enjoyed cold within 2 days; if reheating the chicken separately, heat to 74°C before serving.
