Instructions

  1. In a large pot over medium heat, heat olive oil and brown the lamb chunks on all sides for about 5-7 minutes.
  2. Add the chopped onion, minced garlic, sliced carrot, and red bell pepper to the pot, cooking until softened, around 5 minutes.
  3. Pour in the chicken stock and soy sauce, bringing the mixture to a simmer. Cover and braise on low heat for 45 minutes until the lamb is tender.
  4. While the lamb is braising, cook the egg noodles according to package instructions. Drain and set aside to cool.
  5. Once the lamb is tender, shred it with two forks and mix it with the sauce in the pot. Remove from heat and let it cool slightly.
  6. In a large bowl, combine the cooled noodles and shredded lamb mixture. Toss well to incorporate.
  7. Garnish with fresh coriander before serving cold or at room temperature.
