Braising Beef Noodles with Winter Vegetables

- In a large pan, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper, then sear them in batches until browned on all sides. Remove and set aside.
- In the same pan, add the chopped onion, carrots, parsnips, and garlic. Sauté for about 5 minutes until the vegetables start to soften.
- Return the beef to the pan, then pour in the beef broth and soy sauce. Add the thyme sprigs and bring the mixture to a simmer.
- Cover the pan, reduce the heat to low, and let it braise for about 45 minutes, until the beef is tender.
- While the beef is braising, cook the egg noodles according to package instructions. Drain and set aside.
- Once the beef is ready, remove the thyme and stir in the cooked noodles, mixing gently to combine. Adjust seasoning if necessary.
- Serve hot, garnished with additional fresh thyme if desired.
