Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sliced mushrooms, cooking until the mushrooms release their moisture and start to brown, about 8 minutes.
  3. Pour in vegetable broth and soy sauce, add thyme sprigs, and bring to a simmer. Cover and braise on low heat for 25 minutes.
  4. While the mushrooms are braising, place cubed potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes.
  5. Drain the potatoes and return them to the pot. Add butter, chopped parsley, salt, and pepper. Mash until creamy.
  6. Serve the braised mushrooms over a generous scoop of herbed mashed potatoes, garnished with additional thyme or parsley if desired.
