Instructions

  1. Preheat the broiler in your oven to high.
  2. In a bowl, mix the sliced beef with olive oil, soy sauce, minced garlic, and black pepper. Let it marinate for 10 minutes.
  3. Meanwhile, rinse the rice under cold water until the water runs clear. In a medium saucepan, bring 500 ml of water to a boil. Add the rice, cover, and reduce heat to low. Cook for 18-20 minutes or until the water is absorbed.
  4. While the rice cooks, arrange the sliced vegetables on a baking sheet. Drizzle with olive oil and a pinch of salt, tossing to coat.
  5. Spread the marinated beef on another baking sheet. Broil the beef and vegetables in the oven for about 10-12 minutes, turning halfway through, until the beef is cooked to your liking and the vegetables are tender.
  6. Fluff the cooked rice with a fork and stir in chopped parsley. Serve the rice topped with the beef and broiled vegetables.
