Instructions

  1. In a medium saucepan, combine the long-grain rice, water, and a tablespoon of olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is cooked and water is absorbed.
  2. While the rice is cooking, preheat the broiler. In a large oven-safe pan, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the mixed shellfish to the pan and cook for about 3-4 minutes until they start to open. Stir in chopped spinach, diced yellow bell pepper, and halved cherry tomatoes. Season with salt and pepper.
  4. Once the shellfish and vegetables are mixed well, transfer the pan to the broiler and broil for 5-7 minutes until the shellfish are fully cooked and vegetables are slightly charred.
  5. Fluff the cooked rice with a fork and serve in bowls, topped with the broiled shellfish and vegetables. Garnish with chopped fresh parsley.
