Instructions
- In a bowl, combine olive oil, balsamic vinegar, minced garlic, thyme, and salt to create the marinade.
- Add sliced mushrooms to the marinade, ensuring they are well coated. Cover and let them marinate in the refrigerator for 20-30 minutes.
- While the mushrooms are marinating, rinse the brown rice under cold water. In a pot, combine the rice and water, bring to a boil, then reduce to a simmer and cover for about 15 minutes, or until the rice is tender and water is absorbed.
- Once cooked, fluff the rice with a fork and let it cool to room temperature.
- In a large bowl, combine the cooled rice, marinated mushrooms (including the marinade), pomegranate seeds, parsley, and black pepper. Toss gently to combine.
- Serve chilled or at room temperature, garnished with extra parsley if desired.
