- In a bowl, combine shrimp, mussels, lemon juice, olive oil, minced garlic, salt, and black pepper. Marinate for 20 minutes in the refrigerator.
- While the seafood marinates, prepare the herb salsa by mixing chopped parsley, cilantro, red onion, cherry tomatoes, and lime juice in a separate bowl. Set aside.
- Heat a skillet over medium heat. Cook the marinated shrimp and mussels for about 5-7 minutes until shrimp are pink and mussels open. Discard any unopened mussels.
- Warm the flatbreads in a dry skillet or oven until pliable.
