Instructions

  1. Start by steaming the chicken breast for about 20 minutes or until fully cooked and no longer pink in the center. Let it rest before slicing.
  2. While the chicken is steaming, prepare the vegetables. Chop the romaine lettuce, halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and dried oregano to make the dressing.
  4. Once the chicken is cooked, slice it into strips and combine it with the chopped vegetables in a large bowl.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Warm the tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  7. To serve, place a portion of the salad mixture on each tortilla, top with crumbled feta cheese, and roll or fold the tortillas to enclose the filling.
