- In a small bowl, whisk together the lemon juice, 3 tablespoons of olive oil, minced garlic, salt, and black pepper to create the herb dressing.
- Warm the flatbreads in a dry skillet for about 1-2 minutes on each side or until pliable. Top each flatbread with the crispy chickpeas, followed by the vegetable mixture. Drizzle with the herb dressing and serve immediately.
