Mediterranean Lamb Flatbreads

Instructions
- In a bowl, combine the lamb strips with olive oil, minced garlic, cumin, paprika, salt, and pepper. Marinate for at least 15 minutes.
- Preheat the broiler on high. Line a baking tray with foil.
- Spread the marinated lamb on the tray and broil for about 10-15 minutes, or until cooked through and slightly charred, flipping halfway through.
- While the lamb is broiling, prepare the yogurt sauce by mixing yogurt, lemon juice, and salt in a small bowl. Set aside.
- Warm the flatbreads in the oven or on a skillet for a few minutes until soft.
- Once the lamb is done, assemble the flatbreads by topping them with the broiled lamb, sliced bell peppers, cherry tomatoes, and red onion.
- Drizzle with yogurt sauce and sprinkle with chopped parsley before serving.
