Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 5 minutes.
  2. Add the sliced mushrooms to the pot, stirring until they release their moisture and become golden brown, about 10 minutes.
  3. Pour in the vegetable broth, thyme, salt, and black pepper. Bring to a simmer and let cook for 15 minutes to meld the flavors.
  4. While the stew simmers, rinse the quinoa under cold water. In a separate pot, combine the quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the water is absorbed.
  5. Once the mushrooms are tender and the stew is fragrant, remove from heat. Stir in lemon juice and adjust seasoning if necessary.
  6. To serve, place a generous scoop of quinoa in each bowl, top with the mushroom stew, and sprinkle with chopped parsley.
