Instructions
- In a medium bowl, combine the sliced carrot and cucumber. In a separate bowl, whisk together the white vinegar, sugar, water, and salt until dissolved. Pour the mixture over the vegetables and let them pickle for at least 15 minutes.
- Heat olive oil in a large pan over medium-high heat. Add the beef strips and season with salt and pepper. Sear until browned, about 5 minutes. Remove the beef and set aside.
- In the same pan, add minced garlic and cook for 1 minute until fragrant. Stir in the pasta and vegetable broth, bringing it to a simmer. Cook the pasta according to package instructions until al dente, stirring occasionally.
- Once the pasta is cooked, return the beef to the pan and mix well. Allow to heat through for another 2-3 minutes.
- Serve the pasta topped with pickled vegetables and a sprinkle of chopped parsley.
