Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine olive oil, cumin, paprika, minced garlic, salt, and black pepper. Add the beef and massage the marinade into it. Let it sit for 10 minutes.
  3. Place the marinated beef on a baking tray and roast for 25-30 minutes, or until it reaches your desired doneness. Let it rest before slicing.
  4. Meanwhile, rinse quinoa under cold water. In a pot, combine quinoa with 600 ml of water and a pinch of salt. Bring to a boil, then reduce heat and cover, simmering for 15 minutes until fluffy.
  5. In a large bowl, combine cooked quinoa, diced bell pepper, cucumber, and spring onions.
  6. To make the dressing, whisk together orange juice, lime juice, honey, and chili flakes in a small bowl.
  7. Slice the roasted beef thinly and serve it over the quinoa salad, drizzling with the spicy citrus dressing.
