Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, combine olive oil, cumin, paprika, minced garlic, salt, and black pepper. Add the beef and massage the marinade into it. Let it sit for 10 minutes.
- Place the marinated beef on a baking tray and roast for 25-30 minutes, or until it reaches your desired doneness. Let it rest before slicing.
- Meanwhile, rinse quinoa under cold water. In a pot, combine quinoa with 600 ml of water and a pinch of salt. Bring to a boil, then reduce heat and cover, simmering for 15 minutes until fluffy.
- In a large bowl, combine cooked quinoa, diced bell pepper, cucumber, and spring onions.
- To make the dressing, whisk together orange juice, lime juice, honey, and chili flakes in a small bowl.
- Slice the roasted beef thinly and serve it over the quinoa salad, drizzling with the spicy citrus dressing.
