Instructions

  2. In a large bowl, combine new potatoes with half of the olive oil, garlic, lemon zest, salt, and pepper. Toss to coat evenly.
  3. Spread the potatoes on a large baking sheet and roast for 20 minutes.
  4. After 20 minutes, add the asparagus to the baking sheet, drizzle with the remaining olive oil, and toss with parsley. Place the fish fillets on top, squeeze lemon juice over everything, and season with additional salt and pepper.
  5. Return the baking sheet to the oven and roast for an additional 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
