Instructions
- Preheat the oven to 200°C (390°F).
- In a bowl, mix the minced garlic, olive oil, rosemary, salt, and black pepper. Coat the lamb slices with this mixture and set aside.
- Toss the thinly sliced potatoes in melted butter, paprika, salt, and pepper until well coated.
- On a baking sheet, arrange the potato slices in stacks, overlapping slightly, to create small towers.
- Place the lamb slices on another baking sheet. Roast both the lamb and potato stacks in the preheated oven for 30-35 minutes, or until the lamb is cooked to your desired doneness and the potatoes are golden and crispy.
- Remove from the oven and let the lamb rest for 5 minutes before slicing.
- Plate the potato stacks and top with sliced lamb. Drizzle with balsamic reduction and sprinkle with fresh parsley.
