Instructions

  1. Preheat the sous vide water bath to 56°C for medium-rare beef.
  2. Season the beef steak generously with salt and black pepper, then vacuum-seal it.
  3. Cook the beef in the sous vide bath for 1 hour.
  4. While the beef is cooking, boil a pot of salted water and cook the pasta according to package instructions. Drain and set aside.
  5. Once the beef is done, remove it from the bag and sear it in a hot skillet for 1-2 minutes per side to develop a crust.
  6. In a large bowl, combine the cooked pasta, arugula, halved cherry tomatoes, diced red bell pepper, and chopped parsley.
  7. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  8. Drizzle the dressing over the pasta salad and toss gently to combine.
  9. Slice the beef thinly against the grain and serve it atop the pasta salad.
