Instructions
- Preheat the sous vide water bath to 85°C.
- Clean the mushrooms and cut them into even slices. Place them in a vacuum-seal bag with olive oil, thyme, salt, and pepper, then seal the bag.
- Submerge the sealed bag in the water bath and cook for 45 minutes.
- While the mushrooms are cooking, prepare the salad base. In a large bowl, combine the mixed greens and cherry tomatoes. Dress with balsamic vinegar and toss gently.
- Once the mushrooms are cooked, remove the bag from the water bath. Carefully open the bag and transfer the mushrooms to a plate.
- Warm the flatbreads in a dry skillet over medium heat for about 1-2 minutes on each side.
- To serve, place a flatbread on each plate, top with the salad mixture, and arrange the sous vide mushrooms on top.
