Instructions
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a pot, combine the rinsed rice and 400 ml of water, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice cooks, prepare a steamer basket over boiling water. Add the cleaned mussels and shrimp to the basket, and steam for about 5-7 minutes until the mussels open and shrimp turn pink.
- In a large bowl, combine the cooked rice, steamed shellfish, asparagus pieces, and sliced radishes.
- Drizzle the olive oil and lemon juice over the mixture, and season with salt and black pepper. Toss gently to combine.
- Add the chopped parsley and mix well before serving.
