Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and fry for about 30 seconds until fragrant.
  2. Add the chopped onion, garlic, and ginger to the pot. Sauté until the onion becomes translucent.
  3. Stir in the beef chunks, cooking until browned on all sides. Add the coriander powder, turmeric powder, salt, and black pepper, stirring to coat the meat with the spices.
  4. Pour in the beef stock and bring the mixture to a boil. Reduce heat, cover, and let it simmer for about 45 minutes until the beef is tender.
  5. While the beef is simmering, boil the diced potatoes in salted water until fork-tender, about 10-15 minutes. Drain and let cool.
  6. In a bowl, combine the potatoes, chopped cilantro, lemon juice, olive oil, and salt. Toss gently to combine.
  7. Once the beef is tender, let it cool slightly before mixing it with the potato salad. Serve chilled or at room temperature.
