- Preheat the broiler to high and prepare a baking sheet lined with foil.
- In a bowl, combine olive oil, minced garlic, soy sauce, and black pepper to create a marinade. Add the beef, ensuring it is fully coated. Let it marinate for at least 15 minutes.
- Meanwhile, prepare the vegetables by peeling and cutting the carrots and parsnips into even-sized pieces. Toss them with olive oil, salt, and thyme, then spread them on the prepared baking sheet.
- Roast the vegetables under the broiler for about 20 minutes, stirring halfway through until they are tender and caramelized.
