Quick-pickled onions
- Place the sliced red onion in a heatproof bowl. In a small saucepan, bring the white wine vinegar, water, sugar, and 3 g fine sea salt to a bare simmer over medium heat, stirring until dissolved, 1-2 minutes.
- Pour the hot brine over the onions, press down so all slices are submerged, and let sit at room temperature for 15 minutes, tossing once; they will turn bright pink. Drain well, reserving 1 tbsp (15 ml) brine for the stir-fry if you like, and spread the onions on a paper towel to shed excess moisture.
Lemon yogurt
- In a small bowl, whisk the Greek yogurt with 2 tsp lemon zest, 1 tbsp (15 ml) lemon juice, the olive oil, and 2 g fine sea salt until smooth. Refrigerate 10 minutes to thicken and let the flavors bloom.
Stir-fry and assembly
- Mise en place: In a jug, whisk the eggs with 30 ml water, half of the black pepper (about 1/4 tsp) and 3 g fine sea salt until lightly frothy, 20-30 seconds. Pat all vegetables dry so they sear rather than steam. Separate the spring onion whites and greens.
- Warm the flatbreads in a dry large skillet over medium heat until pliable and lightly charred in spots, 1-2 minutes per side. Stack and wrap in a clean towel to keep warm.
- Heat a wok or a large 30 cm nonstick skillet over high heat until just smoking, 2-3 minutes. Add 10 ml rapeseed oil, swirl, then pour in the egg mixture. Using a silicone spatula, pull from the edges toward the center to form glossy ribbons; cook just until softly set with a custardy sheen, 30-45 seconds. Slide the eggs onto a warm plate; they will finish with carryover heat.
- Return the wok to high heat. Add the remaining 20 ml rapeseed oil. Add the green beans and courgette and stir-fry until lightly blistered at the edges, 2-3 minutes. Add the red pepper, spring onion whites, and garlic; stir-fry until fragrant and the vegetables are crisp-tender, 2-3 minutes more.
- Season the vegetables with 4 g fine sea salt, the remaining black pepper (about 1/4 tsp), and the chili flakes. If using, splash in 1 tbsp reserved onion brine; it will sizzle and gloss the vegetables. Add the spring onion greens and toss for 20 seconds.
- Return the soft-scrambled eggs to the wok and fold gently through the vegetables just to lace them, 20-30 seconds. Off the heat, scatter in the torn basil. Let the pan rest 1 minute so the eggs relax and absorb flavors.
- To serve, spoon a quarter of the stir-fry onto each warm flatbread. Drizzle with the lemon yogurt and top with a tangle of pickled onions. Serve immediately with lemon wedges for squeezing.
