Instructions
- Boil the eggs first (6–7 min for soft-boiled, longer for hard-boiled).
- Cool them in ice water, peel, then marinate the peeled eggs in soy sauce, rice vinegar, sesame oil, and garlic for at least 30 minutes (or longer for deeper flavor).
- While the eggs are marinating, slice the zucchini and red bell pepper into 1 cm thick pieces. Toss them in olive oil, salt, and black pepper.
- Preheat a grill or grill pan over medium heat. Grill the vegetables for about 3-4 minutes on each side until they are tender and have nice grill marks.
- Slice th eggs in half, then layer them with the grilled vegetables on a plate. Sprinkle with chopped cilantro and sesame seeds before serving.
