Instructions

  2. While the eggs marinate, cook the egg noodles according to package instructions. Drain and set aside.
  3. In a pan, heat olive oil over medium heat. Add kale or spinach, season with salt and pepper, and sauté for 5-7 minutes until wilted. Stir in lemon juice.
  4. Remove the eggs from the marinade and cook in boiling water for 6-7 minutes for soft-boiled. Cool in ice water, peel, and halve.
  5. To serve, place a portion of noodles in a bowl, top with sautéed greens, and add halved eggs. Garnish with fresh herbs and sesame seeds.
