Instructions
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, and minced garlic. Add eggs and marinate for 15 minutes.
- While the eggs marinate, cook the egg noodles according to package instructions. Drain and set aside.
- In a pan, heat olive oil over medium heat. Add kale or spinach, season with salt and pepper, and sauté for 5-7 minutes until wilted. Stir in lemon juice.
- Remove the eggs from the marinade and cook in boiling water for 6-7 minutes for soft-boiled. Cool in ice water, peel, and halve.
- To serve, place a portion of noodles in a bowl, top with sautéed greens, and add halved eggs. Garnish with fresh herbs and sesame seeds.
