Instructions

  1. In a bowl, combine sliced mushrooms, olive oil, balsamic vinegar, minced garlic, thyme, salt, and pepper. Mix well and let marinate for at least 20 minutes.
  2. Preheat the oven to 200°C (400°F).
  3. Toss the cubed potatoes in olive oil, salt, and pepper, then spread them on a baking sheet in a single layer.
  4. Roast the potatoes in the preheated oven for 25 minutes, or until golden and tender, stirring halfway through.
  5. Add the marinated mushrooms to the baking sheet with the potatoes and roast for an additional 15 minutes, until the mushrooms are cooked through.
  6. Remove from the oven, garnish with chopped parsley, and serve hot.
