Instructions

  1. In a bowl, combine the shellfish, olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Mix well to coat the shellfish. Cover and marinate for 15 minutes.
  2. In a saucepan, bring the vegetable broth to a boil. Add the rice and salt, reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
  3. Remove the rice from heat, fluff with a fork, and stir in the chopped dill. Keep warm.
  4. While the rice is cooking, heat a grill or grill pan over medium-high heat. Grill the marinated shellfish for about 3-4 minutes on each side until cooked through.
  5. To serve, place a scoop of herbed rice on each plate, top with the grilled shellfish, and drizzle with olive oil. Garnish with lemon wedges.
