Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  3. Add halved cherry tomatoes to the skillet and cook until softened, about 5 minutes.
  4. Pour in the chicken broth, bring to a gentle simmer, and add the chicken breasts. Poach the chicken for about 15 minutes, or until fully cooked.
  5. Remove the chicken and allow to rest for a few minutes before slicing it thinly.
  6. Add fresh spinach to the skillet, stirring until wilted, and season with salt and pepper.
  7. Combine the cooked pasta with the vegetable mixture, tossing to coat evenly.
  8. Serve the pasta topped with sliced poached chicken and garnish with fresh basil.
