Instructions
- Rinse the rice under cold water until the water runs clear, then combine it with 600 ml of water in a pot. Bring to a boil, then reduce to low heat, cover, and simmer for 18 minutes.
- While the rice is cooking, prepare the quick pickled vegetables. Thinly slice the carrot and cucumber, and place them in a bowl.
- In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve, then pour over the sliced vegetables. Let them pickle for at least 15 minutes.
- In another pot, bring water to a boil and gently lower in the eggs. Boil for 6 minutes for soft-boiled eggs, then transfer them to an ice bath to stop cooking.
- Once the rice is cooked, fluff it with a fork and divide it among serving bowls. Top each bowl with pickled vegetables and peel the eggs, placing them on top.
- Garnish with fresh cilantro and serve immediately, enjoying the vibrant flavors and textures.
