Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the diced potatoes, sliced carrots, and onion wedges with olive oil, salt, black pepper, and half of the chopped rosemary until evenly coated.
  3. Spread the vegetables on a large baking tray and roast in the preheated oven for 25 minutes.
  4. While the vegetables are roasting, season the beef sirloin steaks with salt, black pepper, and the remaining rosemary.
  5. After 25 minutes, remove the tray from the oven and push the vegetables to the sides to create space for the beef.
  6. Place the seasoned beef steaks in the center of the tray and return it to the oven for an additional 25 minutes, or until the beef is cooked to your desired doneness.
  7. Once cooked, remove the tray from the oven and let the beef rest for about 5 minutes before slicing.
  8. Serve the sliced beef alongside the roasted vegetables, garnished with extra rosemary if desired.
