Instructions
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine olive oil, minced garlic, thyme, salt, and pepper. Rub this mixture all over the chicken thighs.
- Place the seasoned chicken thighs in a roasting pan and roast in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
- While the chicken roasts, bring 1 liter of water to a boil in a large pot. Add the egg noodles and cook according to package instructions until al dente, about 6-8 minutes.
- In the last 5 minutes of cooking the noodles, add the sliced leek to the pot.
- Once cooked, drain the noodles and leek, then return to the pot. Add butter and chopped parsley, tossing until well combined.
- Serve the roasted chicken thighs atop the herb noodles, garnished with additional parsley if desired.
