- Preheat the oven to 200°C (390°F).
- In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, thyme, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade. Let them sit for 10 minutes.
- Place the marinated chicken on a baking tray and roast in the preheated oven for 40-45 minutes until the skin is golden and the internal temperature reaches 75°C (165°F).
- While the chicken is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- Drain the pasta and return it to the pot. Add butter, chopped parsley, and grated parmesan cheese, mixing until well combined.
- Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving.
