Instructions
- Preheat the oven to 200°C (390°F).
- In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, and salt. Spread on a baking sheet and roast for 20-25 minutes until golden and crispy.
- While the chickpeas are roasting, cook the egg noodles according to package instructions. In the last 2 minutes, add the spinach to the pot to wilt.
- In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth. Adjust the consistency with more water if needed.
- Once the chickpeas are done, assemble the bowls by placing the noodles and spinach at the bottom, topping with roasted chickpeas, and drizzling with tahini sauce.
- Garnish with chopped parsley and serve immediately.
