Instructions

  1. Preheat the sous vide water bath to 56°C.
  2. In a bowl, mix soy sauce, minced garlic, and black pepper. Add the beef sirloin and marinate for at least 30 minutes.
  3. Once marinated, place the beef in a vacuum-sealed bag and sous vide for 1 hour.
  4. While the beef is cooking, prepare the vegetables. Toss the sliced bell pepper, zucchini, and julienned carrot with olive oil, salt, and pepper, then spread them on a baking sheet.
  5. Roast the vegetables in a preheated oven at 200°C for 20 minutes until tender and slightly caramelized.
  6. Cook the noodles according to package instructions, then drain and set aside.
  7. After the beef has finished sous vide cooking, remove it from the bag and sear in a hot pan for 1-2 minutes on each side for a nice crust.
  8. Slice the beef thinly against the grain.
  9. To serve, place a portion of noodles on each plate, top with sliced beef, and garnish with roasted vegetables and fresh parsley.
