- In a large bowl, mix together the olive oil, minced garlic, chopped parsley, thyme, salt, and pepper. Add the chicken breast and coat well. Marinate for at least 15 minutes.
- While the chicken marinates, prepare the rice according to package instructions, replacing half the water with chicken broth for added flavor.
- Set up a steaming basket over boiling water and add the broccoli and carrots. Steam the vegetables for about 8-10 minutes until tender.
- In the same pot, add the marinated chicken to the steaming basket. Cover and steam for 20-25 minutes or until the chicken is fully cooked (internal temperature of 75°C).
- Fluff the cooked rice and serve it on plates, topped with the steamed chicken and vegetables.
