Instructions
- Start by seasoning the fish fillets with salt, black pepper, lemon zest, and lemon juice. Let them marinate for about 10 minutes.
- While the fish is marinating, bring a pot of salted water to a boil and cook the pasta according to package instructions. Reserve 100 ml of pasta water, then drain the pasta and set aside.
- In the same pot, add the Brussels sprouts, carrots, and green beans, and steam them for about 5-7 minutes until tender but still crisp.
- In a separate pot or steamer basket, place the marinated fish fillets and steam for about 8-10 minutes until cooked through and flaky.
- In a large bowl, combine the cooked pasta with olive oil, chopped parsley, and reserved pasta water, tossing to coat.
- Serve the herbed pasta topped with the steamed fish and vegetables, garnished with extra parsley and lemon wedges if desired.
