Instructions
- In a pot, bring 1 litre of salted water to a boil and add the diced potatoes. Cook for about 10-15 minutes until tender, then drain and set aside.
- In a large frying pan or wok, heat 2 tablespoons of olive oil over medium-high heat. Add minced garlic and sliced onion, stirring for 2 minutes until fragrant.
- Add the chicken pieces to the pan, cooking until browned, about 5-7 minutes.
- Stir in the sliced bell pepper, smoked paprika, and soy sauce. Cook for an additional 3-4 minutes until the peppers are tender.
- Combine the cooked potatoes with the stir-fried chicken mixture, tossing gently to coat. Cook for another 2-3 minutes to heat through.
- Serve hot, garnished with chopped parsley.
